Step 1: Heat that loving oven to 450°F (200°C).
Step 2: Get skillful by finely slicing your onion and garlic and set aside.
Step 3: Season the salmon with a little salt of pepper, add the lemon zest, and then drizzle with â
the olive oil.
Step 4: Heat another â
of the olive oil in a large pan over a high heat.
Step 5: Sear the salmon skin-side down for about 3 minutes in the hot pan, then set aside.
Step 6: Reduce the heat of the pan, and add the remaining olive oil, onion, garlic and capers. Allow everything to cook nicely for about 3 minutes until the onions are translucent.
Step 7: Add the chopped tomatoes to the mix, then the vegetable stock, then the tomato paste and bring everything to a simmer. Once a simmer is getting underway, add all remaining ingredients to the sauce mix.
Step 8: Cook for about 10 minutes over a low-medium heat.
Step 9: Transfer the saucy mix to a baking dish and lay the salmon fillet on top.
Step 10: Bake for around 10 minutes, allowing the salmon to slightly crisp on top, before serving up with some fresh parsley.
