Step 1: Preheat the oven to 180C. Wash the sweet potato, donât peel it! Just leave the skin on. Prick it a few times using a fork. Place it on a baking tray and roast until it becomes soft, which will take between 30 – 45 minutes (depending on the size)..
Step 2: Once the sweet potato is cooked, let it cool before putting it inside an airtight container and store in the fridge (for later, or serve right away).
Step 3: Wash and slice the berries according to your preferred cut.
Step 4: Cut the sweet potato down the middle then put on top the berries, yoghurt, granola. Finish it off with a drizzle of honey!
