A warming classic that will barely dent your Calorie count.
Step 1: Get chopping! Finely slice the onion, garlic, mushrooms, and thyme.
Step 2: In a small dish, give your flour and greek yogurt a quick mix.
Step 3: In a non-stick saucepan, add the olive oil and the chopped onion. Allow this to sauté for around 2 or 3 minutes (look for a light brown, translucent change in the onion).
Step 4: Throw in the garlic for about 20 seconds while mixing in with the onions.
Step 5: Add the stock and mushrooms to the pot and allow everything to mix well.
Step 6: Bring your mix to a light simmer, add your spices and seasonings, and cook for around 4 minutes.
Step 7: If you prefer a smoother soup, carefully remove from the heat and blend using a hand blender.
Step 8: Transfer to a serving bowl, mix in the greek yogurt creation and serve up!
