Ingredients (for 1 serving)

  • 0.25 cucumber
  • 0.5 red onion
  • 40 grams romaine lettuce
  • 40 grams cherry tomatoes
  • 30 grams canned chickpeas
  • 20 grams olives
  • 25 grams feta cheese
  • 20 ml olive oil
  • 15 ml balsamic vinegar
  • 0.25 tsp dijon mustard
  • 0.25 tsp dried oregano

Preparation

Step 1: In a large bowl, whisk together the balsamic vinegar, olive oil, oregano, Dijon mustard, then add a little salt and pepper to taste.
Step 2: Add the diced cucumber and thinly sliced onion. Let it marinate for at least 5 minutes.
