Step 1: Preheat your lovely little oven to 180 degrees Centigrade while you drain and rinse your beans
Step 2: Get chopping! Roughly chop the bell peppers and the garlic. Grate the onion and halve the cherry tomatoes.
Step 3: Place all vegetables and beans into a baking dish or tray and mix in your olive oil, salt, pepper, tomato paste, and oregano. Mix well.
Step 4: Add a tablespoon of hot water to the mix, but pour it in at an angle ensuring not to wash off the herbs!
Step 5: Cover with foil and roast for 30 minutes.
Step 6: Remove the foil and bake for another 10 minutes to brown the top. Then allow to cool and serve up!
